When someone is "all heart" this means that they are a very giving person. They are not only giving, but they tend to give everything they have. They hold nothing back, they put their heart into whatever it is that they are doing. Examples:
"That football player is all heart. Despite playing with a broken leg, he still scored seven field goals" or "The great basketball player Michael Jordan played with all heart. He always tried his best and often, was the best."
When someone is "all stomach" this means that the person will eat almost anything, they are not finicky eaters.
The phrase "all stomach" can also mean something else: it can mean that a person is fat. Be careful when you use these words or say them to somebody, they could be misinterpreted.
When you have "all eyes" on something, this means that you are either paying full, complete attention, or that you have everyone or all personnel focused on a single issue or cause. Example:
"That man was all eyes the moment that beautiful Czech woman walked into the restaurant and sat down."
